Apple Pie Party Dip

Ingredients for dip:
1 1/2 cups peeled, cored, and diced apple
1 teaspoon fresh lemon juice
2 teaspoons brown sugar
2 teaspoons apricot preserves
1/8 teaspoon cinnamon

Ingredients for chips:
5 (6-inch) flour tortillas
2 Tablespoons butter, melted
1/2 teaspoon cinnamon
1 1/2 Tablespoons sugar

Combine all of the dip ingredients into a bowl. Cover and refrigerate the mixture until well chilled. Brush the tortillas with butter then cut into wedges. Arrange the wedges on a greased baking sheet and sprinkle with cinnamon and sugar. Bake at 350 degrees until golden brown about 10 minutes. Let tortillas cool before serving with the apple dip.


Apple Walnut Muffins

Muffin Ingredients:
1/2 cup butter
1 1/4 cups sugar
1 teaspoon vanilla extract
1/2 teaspoon salt
2 eggs
1 3/4 cups all purpose flour
2 teaspoons baking powder
1/2 teaspoon cinnamon
1/2 cup milk
2 cups peeled, cored and sliced apples
1/2 cup walnuts

Cinnamon Crumble Topping:
1/4 cup sugar
1/2 teaspoon cinnamon
3 Tablespoons all purpose flour
2 Tablespoons butter, cubed

Preheat oven to 375 degrees. Coat inside of muffin pan with cooking spray or line with muffin papers.
In a large bowl, cream together butter, sugar, vanilla and salt until light and fluffy. Beat in eggs, one at a time. Mix together the flour, baking powder and cinnamon. Stir in the flour mixture alternately with the mlk, mixing just until incorporated. Fold in apples and walnuts. Scoop into muffin cups to fill 3/4 full. Lightly sprinkle the tops with Cinnamon Crumble.
To make Cinnamon Crumble Topping: In a small bowl, combine sugar, cinnamon, flour and butter together. Mix together using a pastry blender or two butter knives. The crumble topping should resemble small peas.
Bake for 20 minutes or until tops are golden brown and a toothpick inserted into the center comes out clean. Remove from heat and cool on wire rack.
