Banana Muffins
2 cups bran flakes
1 1/4 cups milk
4 Tablespoons butter
1/4 cup sugar
1 egg
1 teaspoon vanilla extract
1 cup whole wheat flour
1/2 teaspoon salt
1 Tablespoon baking powder
2 bananas,
mashed
Preheat oven 350 degrees. Coat inside of muffin
pan with cooking spray or line with muffin papers.
In a small bowl soak bran flakes in milk for 10 minutes, set aside.
Cream together butter and sugar. Add egg and vanilla, beat until fluffy.
Sift together the flour, salt and baking powder, add to butter mixture
and mix well. Stir in bran flake mixture.
Gently fold in mashed banana.
Scoop into muffin cups to fill 3/4 full. Bake for 30 minutes.
Banana Oatmeal Bread
1/2 cup shortening
1 cup white sugar
2 eggs, beaten
1/2 teaspoon vanilla extract
1 cup all purpose flour
1 cup quick cooking oats
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1 1/2 cups bananas, mashed
1/4 cup milk
Preheat oven to 350 degrees. Grease one 9x5 inch loaf pan and set aside.
Cream together the shortening and sugar. Add eggs and vanilla, beat
until fluffy. Sift together the flour, oatmeal, baking soda, salt and
cinnamon. Add dry ingredients alternatively with the mashed bananas
and milk. Mix until blended. Pour into prepared pan.
Bake for 50-60 minutes; remove from the oven and cover for 5 minutes.
Whole Wheat Banana Nut Waffles
1/2 cup whole wheat flour
1/2 cup all purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
3/4 cup milk
1 banana, mashed
1 egg, seperated
1 Tablespoon butter, melted or vegetable oil
1/4 cup walnut, minced
Sift dry ingredients together in a bowl. Add egg yolk and milk to the
dry ingredients and beat together thoroughly. Beat banana and nuts into
batter. Beat egg white until stiff, stir in 1/4 of the egg white into
the batter to lighten it and then gently fold in the remaining egg white.
Batter is now ready for your favorite waffle iron.
