Spaghetti Squash Saute'
1 Spaghetti Squash, halved lengthwise and seeded
2 Tbsp. Vegetable Oil
1 Onion, chopped
½ Red Bell Pepper, chopped
1 Clove Garlic
1 ½ Cups Tomato, chopped
¾ Cup Feta Cheese, crumbled
3 Tbsp. Black Olive, sliced
2 Tbsp. Fresh Basil, chopped
1. Preheat oven to 350*
2. Place squash cut side down on prepared baking dish. Bake for 30 min.
or until sharp knife can be inserted with a little resistance. Remove
from oven and set aside, cooling enough to be handled.
3. Meanwhile, heat oil in skillet over medium heat. Sauté onion
and pepper in oil until tender. Add garlic and sauté for 2-3
min. Stir in tomato and cook until tomatoes are warm.
4. Use a large spoon to scoop the stringy pulp from the squash and place
in a medium bowl. Toss with the sautéed vegetables, cheese, olives
and basil. Serve warm.
For a more tender squash, put the squash cut side down in a baking dish
close to its size and add 1 ½ cups of water. Bake for 30 min.
Your squash will be soft and perfect.
